Grandma’s Meatloaf

INGREDIENTS:

  • 2 eggs, beaten
  • 2 pounds ground chuck
  • 2 slices whole wheat bread — torn into very small pieces
  • 3/4 cup chopped onion
  • 1/4 cup chopped green pepper
  • 2 tablespoons horseradish
  • 1 tablespoon sea salt
  • 1/4 cup milk
  • 1/4 cup ketchup
  • 1 teaspoon dry mustard

WHAT TO DO:

  • Add eggs to meat; blend lightly with fork.
  • Add remaining ingredients; mix thoroughl but do not stir more than necessary as it tends to toughen the loaf.
  • Place in small loaf pan.
  • Spread top with 1/2 cup ketchup before baking.
  • Bake 1 hour at 400 degrees.

Serves 6


Glorified Brownies

INGREDIENTS:

  • 1 stick butter
  • 1 cup sugar
  • 2 well-beaten eggs
  • 3/4 cup flour
  • 3 tablespoons cocoa
  • Pinch of salt
  • 1 cup chopped pecans (optional)
  • 1 bag miniature marshmallows

WHAT TO DO:

  • Cream butter and sugar — then add eggs. Add remaining ingredients (except marshmallows).
  • Stir in chopped pecans.
  • Pour into 8x8-inch greased pan.
  • Bake at 325 degrees for 25-30 minutes.
  • Remove from oven and push miniature marshmallows into hot brownies.

Frosting:

  • 4 tablespoons butter
  • 3 tablespoons cocoa
  • 4 tablespoons thin cream
  • 2 cups 10x powdered sugar

Cream above ingredients together and spread over warm brownies. Cool and cut into squares.


Barb’s Layered Salad

INGREDIENTS:

  • 1 head of lettuce, broken in pieces
  • 1/2 cup green pepper, chopped
  • 1 onion, diced
  • 1/2 cup celery, diced
  • 1 10-ounce package frozen green
  • peas—thawed, but not cooked
  • 2 cups Hellman’s mayonnaise mixed with 2 tablespoons sugar
  • 1 4-ounce package sharp cheddar cheese, grated
  • 6-8 strips bacon, fried and crumbled Salt, Parmesan cheese, grated

WHAT TO DO:

  • In a bowl, layer first 8 ingredients in order given.
  • Chill for 24 hours. When ready to serve, salt to taste, toss and top with Parmesan cheese.

Serves 8-10. Must be made a day ahead.


Veal Piccata

INGREDIENTS:

  • 1 1/2 pounds veal (or chicken) slices, pounded thin
  • Salt and pepper to taste
  • Flour
  • 3 tablespoons butter
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced (optional)
  • 1/2 pound fresh mushrooms, sliced
  • 2 tablespoons fresh lemon juice
  • 1/2 cup dry white wine
  • 2 teaspoons capers, plus 1 teaspoon caper juice
  • 3 tablespoons minced parsley
  • 1/2 lemon, thinly sliced

WHAT TO DO:

  • Sprinkle meat with salt and pepper on both sides and dust lightly with flour.
  • Heat butter and olive oil in a large skillet.
  • Add meat and brown on both sides. Remove meat from skillet.
  • Add garlic and mushrooms to skillet and cook one minute.
  • Return meat to skillet. Add lemon juice and wine. Cover and simmer for 15 minutes or until meat is tender.
  • Add capers. Remove to warm platter. Sprinkle with parsley and garnish with lemon slices.

Chicken Mmmmmm

INGREDIENTS:

  • 4 half breasts chicken (boned)
  • 4 teaspoons parsley flakes
  • Sea salt — to taste
  • 1/4 cup melted butter
  • 1 cup herb stuffing mix

WHAT TO DO:

  • Sprinkle chicken breasts with parsley and sea salt. Roll up and secure with a toothpick.
  • Roll in butter, then stuffing mix.
  • Place in a heavily greased baking dish. Sprinkle remaining crumbs over chicken and moisten lightly with water.
  • Bake at 325 degrees for 30 to 40 minutes.

Simple, but delicious.


Fresh Apple Cake

INGREDIENTS:

  • 1 1/2 cups vegetable oil
  • 2 cups sugar
  • 4 eggs
  • 2 1/2 cups plain flour
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon salt
  • 3 cups apples (chopped)
  • 1 cup pecans (chopped)
  • 1 teaspoon vanilla

Topping:

  • 1 1/2 cups brown sugar (packed)
  • 1 stick butter
  • 1/2 cup pecans (chopped)
  • 3 teaspoons milk

WHAT TO DO:

  • Blend oil and sugar together.
  • Add eggs, one at a time, beating well after each addition.
  • Sift together dry ingredients and add to egg mixture. Stir in apples, pecans and vanilla.
  • Pour into greased and floured 10-inch tube or bundt pan.
  • Bake at 350 degrees for one hour. Remove from pan when slightly cool.
  • To make topping, place all ingredients in saucepan and bring to a boil.
  • Cook until soft boil stage (234 degrees).
  • Pour topping over warm cake.

Lemon Fluff (My mother’s recipe)

INGREDIENTS:

  • Juice and zest of 1 1/2 lemons
  • 4 egg yolks
  • 1/2cup sugar

WHAT TO DO:

  • Cook in double boiler until thick. Take off fire and add 1/2 box of lemon Jello which has been dissolved in 1/2 cup hot water.
  • Let Cool
  • When cool, add 1/2 pint whipped cream, 4 egg whites beaten stiff and then add 1/2 cup sugar and beat well.

1/2 pound vanilla wafers-

  • Make into fine crumbs and put 1 cup on the bottom of 8” x 8” dish-pour lemon mixture on top of crumbs and sprinkle remaining crumbs on top of mixture.

Cool in refrigerator-cut into squares and serve.


Stuffed Chicken

INGREDIENTS:

Sauté 2 medium onions (chopped fine) in 2 tablespoons of butter

Add the following ingredients to sautéed onions and season:

  • 2 or 3 10oz. Pkgs. of frozen chopped spinach-thaw and drain
  • 2 lbs. Ricotta cheese
  • 2 eggs-slightly beaten
  • 1/2 cup chopped parsley
  • 2 tablespoons oregano, salt, pepper, nutmeg to taste
  • 24 halves of boned chicken breasts- Skin ON

Mustard Sauce

  • 1 cup sour cream
  • 1 cup mayonnaise
  • 1/2 cup Grey Poupon & honey mustard
  • 1/2 cup chopped parsley

Mix well and put on top of chicken

WHAT TO DO:

  • Cut one side of the skin loose on chicken breasts and stuff with spinach mixture-form breast into round dome.
  • Bake in a buttered dish at 350 degrees for 30-35 minutes
  • Cool (in liquid) – slice, top with sauce and serve.
